Brown Butter Rice Crispy Treats

Brown Butter Crispy Treats – only slightly adapted from The Smitten Kitchen

1 stick unsalted butter, plus extra for the pan
1 10-ounce bag small marshmallows
Big 1/4 teaspoon flaky sea salt plus extra for sprinkling
6 cups Rice Krispies cereal

Thoroughly butter an 8-inch square pan with 2-inch sides.

In a large pot, melt butter over medium heat. Watch it melt, then foam, then become golden, and finally start to turn brown and smell nutty. During this process, swirl the pan occasionally to distribute the heat and the nutty brown bits as they form. Watch carefully, as the transformation between butter and brown butter happens in less than a minute.

Turn off the heat. Sprinkle the salt over the butter and give it a little stir. Quickly, add the marshmallows and stir rigorously until the marshmallows are melted and creamy.

Pour in the cereal and fold quickly until all of the cereal is coated in the melted marshmallows. Hurry! Spread the mixture into the prepared pan. Using a rubber spatula, press the crispies down firmly until they are compact. Sprinkle just a little more sea salt on top. Refrigerate for about an hour, then cut into squares. The final step is to enjoy!
