Mini Pork Meatballs with Sweet Chili Sauce

IMG_1389(MARINA) I was first introduced to this recipe in a cooking school called The Kitchen Table where I occasionally attend cooking camps. At that school, we (as in, the class) made these mini pork meatballs. When the class was done, I went to my mom and said, “Mom, you need to try these meatballs, they are amazing!” So she did, and she couldn’t stop saying OMG THIS IS THE BEST THING I’VE EVER EATEN!!!!

A few weeks later, it was the Fourth of July and our annual block party. To know if the meatballs were really that good, we tested them on the neighbors. These mini bites were gone in less than a minute! They were truly the best meatballs of all time. Just yesterday, we made the meatballs for the big Super Bowl. This time, they turned out a little on the hot side: I ate one, and then stuck a piece of ice on my head because it was so spicy! Once again, at our Super Bowl party, these little flavor bombs were gone in less than a minute! A tip is to use your hands to mix the meat. This way, everything comes together really well.

Mini Pork Meatballs with Cilantro and Sweet Chili Dipping Sauce – Adapted from The Kitchen Table Cooking School

4 Tablespoons dry bread crumbs, unseasoned4 Tablespoons milk
1 pound ground pork
1 egg, lightly beaten
6 whole water chestnuts, drained and finely chopped
Pinch salt
4 Tablespoons chopped cilantro
2 cloves garlic, minced
2 teaspoons soy sauce
2 teaspoons sesame oil
1 teaspoon crushed red pepper flakes

Chili Sauce
1/2 cup bottled Sweet chili Sauce
2 Tablespoons soy sauce
2 Tablespoons fresh lime juice

Heat oven to 450-degrees and line baking sheet with parchment paper.
In large bowl, combine bread crumbs and milk and allow it to set for two minutes. Stir in beaten egg. Add chopped cilantro, minced garlic, and chopped water chestnuts to the milk/bread crumb mixture. Mix in soy sauce, sesame oil, salt, and red pepper flakes. Stir all to combine well. Now add ground pork and mix loosely with a fork, then use clean hands to mix well.

Form mixture into approximately 16 small meatballs and place on parchment-lined baking sheet. Bake until completely cooked through and lightly browned on top, 16-20 minutes.

For sauce: Mix all ingredients. Serve meatballs hot with sauce for dipping.
